Five-year-old Andrew McArdle, owner of Mountain Man Micro Farms, lives and breathes all things green. As his company’s only employee, McArdle works seven days a week from 3 or 4 a.m. to 7 or 8 p.m. But growing microgreens — growing edible vegetables — is his passion. “I love what I do,” he said. “A farm is a fun business.”

In January, McArdle realized his dream of a 3,000-square-foot home with a greenhouse in Franktown (near Castle Rock). There, he grows 30 to 40 varieties of microgreens and plans to bring more vegetables into the mix before the pandemic changes his plans. In fact, by mid-March, McArdle was delivering live microwave boxes to 60 leading restaurants. Super Mega Bien, Bamboo Sushi, Flagstaff House and Blackbelly in Boulder and Farmhouse Breckenridge Brewery in Littleton were among his customers until Governor Police announced the restaurants would close on March 16. “I lost a lot in 12 hours. A restaurant bill,” McArdle said. “I’m just wondering how I’m going to pay my bills.”

All but three of McArdle’s restaurant accounts canceled their orders but continued to do business with customers due to high demand for food delivery. Before the Covid-19 season, they drove to two or three houses, but now they bring 50 front residences every week. “I’m amazed at all the online orders,” says McArdle. “I think people are becoming more health conscious and looking for ways to eat green.”
